Pollo Guisado - Stewed Chicken
This recipe is probably the most near and dear to my heart. Growing up in a Puerto Rican household, this was a staple meal. Whether in the coldest of winters, or the hottest summer days, this was a filling and hearty meal that will always remind me of home. It was the first meal I made for my now wife, Elena, and regardless of what I prepare, I feel like it symbolizes me and my cooking.
